As all other tea types  link do tea plant, oolong teas also originate from the Camellia sinensis plant. The technique for making oolong tea was discovered about 500 years ago in Taiwan. After the picking tea leaves are rolled and bruised on the edges. While the leaves are drying the bruised edges going through the fermentation, so the leaves turn reddish to brownish in color but the core of the leaf is still green. To stop the fermentation process and to create a semi-fermented tea leaves are heated. The degree of fermentation varies between 20% and up to 80%. Oolong tea is more like to green tea than to black, so has the same antioxidant properties as the green tea.

Preparation:  Making loose leaf oolong tea requires hot water at 90º-100º.  Use  1 full tsp. of loose tea per 200ml of water and steep for 3 minutes.

Pu Erh is the only tea that improves the quality with aging and in that respect it is very much like wine. It comes in many forms from loose leaf to compressed. •    helping digestion (particularly of fatty foods)
•    promotes a state of deep relaxation

Pu Erh is one of China's oldest teas made from a large leafed Yunnan tea (Camellia sinensis var. assamica). The leaves are fermented twice over several weeks and then dried. Post-fermentation is processed with microorganisms (Aspergillus sp.,Penicillium sp) and it gives Pu Erh a strong earthy flavour, mild taste and deep hazel brown colour.

The ageing and additional fermentation also allowed the teas to be easily transported. The Pu-er tea is not one to be drunk for its stimulating effects, nor for its flavour, but rather for its beneficial effect on health in general. It is widely drunk to manage weight and cholesterol levels as well as aid digestion and promote a state of calmness and deep relaxation. Pu-erh is the perfect tea after a heavy meal. To feel the benefits it is recommended that one cup is drunk with or after each meal for around three months.
